Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (16 ounce) package refrigerated tortellini
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 lemon, juiced
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the tortellini and vegetable broth. Bring to a boil, then reduce heat and simmer for 8-10 minutes, or until tortellini are cooked through and most of the liquid has been absorbed.
  4. Stir in the heavy cream, Parmesan cheese, and spinach. Cook until spinach wilts and sauce thickens, about 2-3 minutes.
  5. Stir in lemon juice. Season with salt and pepper to taste.
  6. Serve immediately.
