Description

A simple one-pot meal featuring creamy orzo and savory mushrooms.


Ingredients

Scale
  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add mushrooms and cook until softened, about 5-7 minutes.
  3. Stir in shallot and garlic; cook for 1 minute.
  4. Add orzo and toast for 1 minute.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15-20 minutes, or until orzo is cooked and most of the liquid is absorbed.
  7. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.

Notes

  • You can substitute other types of mushrooms.
  • For a vegan version, use plant-based cream and omit the Parmesan cheese.
