A simple one-pot meal featuring creamy orzo and savory mushrooms.
Ingredients

- 1 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 1 shallot, minced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add mushrooms and cook until softened, about 5-7 minutes.
- Stir in shallot and garlic; cook for 1 minute.
- Add orzo and toast for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15-20 minutes, or until orzo is cooked and most of the liquid is absorbed.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- You can substitute other types of mushrooms.
- For a vegan version, use plant-based cream and omit the Parmesan cheese.
- Adjust the cooking time based on your orzo.
