Description

A simple one-pot meal with creamy tomato sauce and tender chicken, without pasta.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1.5 lbs chicken thighs, boneless and skinless, cut into 1-inch pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh basil
  • Grated Parmesan cheese, for serving


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Add chicken to the skillet and cook until browned on all sides. Remove from skillet and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Add garlic and cook for 1 minute more.
  6. Stir in crushed tomatoes and chicken broth. Bring to a simmer.
  7. Return chicken to the skillet. Reduce heat, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
  8. Stir in heavy cream and basil. Heat through.
  9. Serve hot, garnished with Parmesan cheese.

Notes

  • You can substitute chicken breasts for thighs, but adjust cooking time.
  • For a spicier dish, add a pinch of red pepper flakes.
  • Serve with a side of crusty bread for dipping.
