Description
A simple one-pot meal with creamy tomato sauce and tender chicken, without pasta.
Ingredients

- 2 tbsp olive oil
- 1.5 lbs chicken thighs, boneless and skinless, cut into 1-inch pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup chopped fresh basil
- Grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper.
- Add chicken to the skillet and cook until browned on all sides. Remove from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in crushed tomatoes and chicken broth. Bring to a simmer.
- Return chicken to the skillet. Reduce heat, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
- Stir in heavy cream and basil. Heat through.
- Serve hot, garnished with Parmesan cheese.
Notes
- You can substitute chicken breasts for thighs, but adjust cooking time.
- For a spicier dish, add a pinch of red pepper flakes.
- Serve with a side of crusty bread for dipping.
