- 1 onion, chopped
- 2 cloves garlic, minced
- 28 ounces crushed tomatoes
- 4 cups vegetable broth
- 1 pound pasta (penne or similar)
- 5 ounces fresh spinach
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large pot.
- Sauté onion until softened, then add garlic.
- Pour in crushed tomatoes and vegetable broth.
- Bring to a boil.
- Add pasta and cook until al dente.
- Stir in spinach until wilted.
- Season with salt and pepper.
- Garnish with basil, if desired.
Notes
- You can add a pinch of red pepper flakes for heat.
- Adjust the amount of spinach to your preference.
- For extra creaminess, stir in a splash of plant-based milk after cooking.
