Description

A simple one-pot pasta dish with creamy tomato sauce and spinach, made without cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups vegetable broth
  • 1 pound pasta (penne or similar)
  • 5 ounces fresh spinach
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Heat olive oil in a large pot.
  2. Sauté onion until softened, then add garlic.
  3. Pour in crushed tomatoes and vegetable broth.
  4. Bring to a boil.
  5. Add pasta and cook until al dente.
  6. Stir in spinach until wilted.
  7. Season with salt and pepper.
  8. Garnish with basil, if desired.

  • You can add a pinch of red pepper flakes for heat.
  • Adjust the amount of spinach to your preference.
