- 1 pound sausage, sliced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced sausage and cook until browned. Remove sausage and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add orzo pasta to the pot and stir to coat with the drippings.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
- Stir in heavy cream and Parmesan cheese. Return the cooked sausage to the pot.
- Cook, stirring, until the sauce has thickened and the sausage is heated through.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- You can use any type of sausage you prefer, such as kielbasa, Italian sausage, or smoked sausage.
- For a healthier option, use low-sodium broth and a lighter cream.
- Add vegetables like spinach or peas in the last few minutes of cooking.
