Description
A simple one-pot meal combining the flavors of chicken pot pie with gnocchi.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.1 ounce) package shelf-stable gnocchi
- 1 cup frozen peas
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken and cook until browned.
- Add onion, carrots, and celery and cook until softened.
- Stir in garlic. Cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package directions.
- Stir in peas.
- Reduce heat and stir in heavy cream and parsley.
- Season with salt and pepper.
- Serve hot.
Notes
- You can substitute other vegetables like mushrooms or corn.
- For a thicker sauce, add a cornstarch slurry.
- Adjust seasonings to your liking.
