Ingredients

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 8 ounces pasta (rotini or penne work well)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  3. Add chicken and cook until browned.
  4. Add onion and cook until softened. Add garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute more.
  5. Stir in diced tomatoes and chicken broth. Bring to a boil.
  6. Add pasta and cook according to package directions, stirring occasionally.
  7. Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  8. Simmer for a few minutes until the sauce thickens.
  9. Garnish with fresh parsley.
