- 1 pound chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 8 ounces pasta (rotini or penne work well)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken and cook until browned.
- Add onion and cook until softened. Add garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute more.
- Stir in diced tomatoes and chicken broth. Bring to a boil.
- Add pasta and cook according to package directions, stirring occasionally.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
- Simmer for a few minutes until the sauce thickens.
- Garnish with fresh parsley.
- Serve immediately.

- You can add vegetables like bell peppers or mushrooms.
- Adjust the red pepper flakes to your spice preference.
- For a thicker sauce, add a tablespoon of cornstarch mixed with cold water.
