Instructions
- Heat olive oil in a skillet.
- Season chicken with salt, pepper, and Italian seasoning.
- Sear chicken until browned. Remove and set aside.
- Sauté onion and bell pepper.
- Add garlic and rice; cook for 1 minute.
- Pour in chicken broth.
- Return chicken to the skillet.
- Bring to a boil, then simmer until rice is cooked and chicken is done.
- Serve hot.
