Description

A refreshing Orzo Salad perfect for summer.


Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped, to taste
  • Salt and pepper to taste


Instructions

  1. Cook orzo according to package directions.
  2. Drain and rinse with cold water.
  3. In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Add the cooked orzo, cucumber, tomatoes, red onion, and olives.
  5. Toss to combine.
  6. Gently stir in feta cheese and parsley.
  7. Season to taste and serve.

Notes

  • You can add grilled chicken or chickpeas.
  • Adjust vegetables to your liking.
  • Chill for at least 30 minutes before serving.
