A refreshing Orzo Salad perfect for summer.
Ingredients
Scale
- 1 cup orzo pasta
- 2 cups water
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, halved
- 1/4 cup crumbled feta cheese
- Fresh parsley, chopped, to taste
- Salt and pepper to taste
Instructions
- Cook orzo according to package directions.
- Drain and rinse with cold water.
- In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooked orzo, cucumber, tomatoes, red onion, and olives.
- Toss to combine.
- Gently stir in feta cheese and parsley.
- Season to taste and serve.
Notes
- You can add grilled chicken or chickpeas.
- Adjust vegetables to your liking.
- Chill for at least 30 minutes before serving.
