A comforting and easy chicken and rice casserole, Pioneer Woman style.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/4 cup milk
- 1 cup cooked white rice
- 1 cup shredded cheddar cheese
- 1/2 cup crushed Ritz crackers
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, and milk.
- Stir in cooked rice and cheddar cheese.
- Pour the mixture into a greased 8×8 inch baking dish.
- In a small bowl, mix crushed Ritz crackers with melted butter.
- Sprinkle the cracker mixture evenly over the casserole.
- Bake for 25-30 minutes, or until bubbly and lightly browned.
Notes
- You can use rotisserie chicken for convenience.
- Add a pinch of black pepper to the chicken mixture if desired.
- For a crispier topping, add a little more butter to the crackers.
