Description

A comforting and easy chicken and rice casserole, Pioneer Woman style.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons butter, melted


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, and milk.
  3. Stir in cooked rice and cheddar cheese.
  4. Pour the mixture into a greased 8×8 inch baking dish.
  5. In a small bowl, mix crushed Ritz crackers with melted butter.
  6. Sprinkle the cracker mixture evenly over the casserole.
  7. Bake for 25-30 minutes, or until bubbly and lightly browned.

Notes

  • You can use rotisserie chicken for convenience.
  • Add a pinch of black pepper to the chicken mixture if desired.
  • For a crispier topping, add a little more butter to the crackers.
