Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz pasta (penne, fettuccine, or your favorite)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1/4 tsp black pepper
  • Salt to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, season chicken pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  6. Stir in grated Parmesan cheese and black pepper. Cook until sauce thickens slightly.
  7. Return cooked chicken to the skillet. Add the cooked pasta.
  8. Toss everything together until the pasta and chicken are well coated with the sauce.
  9. Serve immediately, garnished with fresh parsley.
