Description

A simple one-pan meal featuring rotisserie chicken and rice.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1.5 cups cooked rotisserie chicken, shredded
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet.
  2. Add onion and cook until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in rice and cook for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer, covered, for 15 minutes.
  7. Stir in chicken and vegetables.
  8. Cook until vegetables are heated through and rice is tender.
  9. Season with salt and pepper.
  10. Garnish with parsley, if desired.
