Description
A simple one-pan meal featuring rotisserie chicken and rice.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1.5 cups cooked rotisserie chicken, shredded
- 1 cup frozen mixed vegetables
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet.
- Add onion and cook until softened.
- Add garlic and cook for 1 minute.
- Stir in rice and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer, covered, for 15 minutes.
- Stir in chicken and vegetables.
- Cook until vegetables are heated through and rice is tender.
- Season with salt and pepper.
- Garnish with parsley, if desired.
Notes
- You can use any type of vegetables you like.
- Leftovers are great for lunch.
