Ingredients

  • 1 rotisserie chicken (shredded)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • Cooked rice for serving


Instructions

  1. Whisk together soy sauce, sesame oil, rice vinegar, and cornstarch.
  2. Heat oil in a large skillet or wok.
  3. Stir-fry onions, peppers, carrots, and broccoli until tender-crisp.
  4. Add garlic and ginger; cook for 30 seconds.
  5. Pour sauce over vegetables.
  6. Add shredded chicken and heat through.
  7. Serve over cooked rice.

Notes

  • Feel free to add other vegetables.
  • Adjust the amount of soy sauce to your taste.
  • For extra flavor, add a pinch of red pepper flakes.
