Quick and easy stir-fry with rotisserie chicken and fresh vegetables.
Ingredients

- 1 rotisserie chicken (shredded)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 onion (sliced)
- 2 cups broccoli florets
- 1 cup sliced carrots
- 2 cloves garlic (minced)
- 1 inch ginger (grated)
- Cooked rice for serving
Instructions
- Whisk together soy sauce, sesame oil, rice vinegar, and cornstarch.
- Heat oil in a large skillet or wok.
- Stir-fry onions, peppers, carrots, and broccoli until tender-crisp.
- Add garlic and ginger; cook for 30 seconds.
- Pour sauce over vegetables.
- Add shredded chicken and heat through.
- Serve over cooked rice.
Notes
- Feel free to add other vegetables.
- Adjust the amount of soy sauce to your taste.
- For extra flavor, add a pinch of red pepper flakes.
