Ingredients

  • Salmon fillets: 2 (6-8 ounces each)
  • Olive oil: 1 tablespoon
  • Salt: to taste
  • Black pepper: to taste
  • Mango: 1 ripe, diced
  • Red onion: 1/4 cup, finely diced
  • Red bell pepper: 1/4 cup, finely diced
  • Jalapeño: 1, seeded and minced (optional)
  • Cilantro: 2 tablespoons, chopped
  • Lime juice: 1 tablespoon
  • Salt: to taste

Instructions

  1. Prepare the mango salsa: Combine mango, red onion, red bell pepper, jalapeño (if using), cilantro, and lime juice in a bowl. Season with salt. Set aside.
