Ingredients

- 1.5 lbs beef sirloin, cut into strips
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Cooked egg noodles, for serving
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear beef until browned, then remove.
- Add onion to skillet and cook until softened.
- Add garlic and cook for 1 minute.
- Whisk together beef broth, sour cream, flour, and Dijon mustard.
- Pour sauce into skillet and bring to a simmer.
- Return beef to skillet and cook until heated through.
- Serve over egg noodles.

- For a thicker sauce, add more flour.
