Description
Tender beef and potatoes cooked in a slow cooker. A simple, hearty meal.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 lbs potatoes, peeled and quartered
- 1 large onion, chopped
- 2 carrots, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet. Sear beef cubes until browned on all sides.
- Place onion, carrots, and garlic in the slow cooker.
- Add the seared beef and potatoes.
- Pour in beef broth.
- Stir in thyme, rosemary, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
- Serve hot.
Notes
- Adjust seasonings to your preference.
- You can add other vegetables, such as celery or parsnips.
- For a thicker gravy, mix a tablespoon of cornstarch with cold water and stir into the slow cooker during the last 30 minutes of cooking.
