A hearty and comforting chicken stew made easily in your slow cooker. Perfect for a chilly evening.
Ingredients

- 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp cornstarch (optional, for thickening)
- 1/4 cup cold water (optional, for thickening)
- 1 cup frozen peas (added at the end)
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Brown chicken on all sides.
- Transfer browned chicken to your slow cooker.
- Add chopped onion, carrots, celery, and minced garlic to the slow cooker.
- Pour in chicken broth.
- Stir in thyme and rosemary.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- If thickening, mix cornstarch and cold water in a small bowl. Stir into the stew during the last 30 minutes of cooking.
- Stir in frozen peas during the last 10 minutes of cooking.
- Taste and adjust seasoning if needed.
Notes
- You can use chicken breasts, but thighs stay more tender in the slow cooker.
- Add other vegetables like potatoes or mushrooms if desired.
- For a richer flavor, add a splash of white wine before the broth.
