Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp cornstarch (optional, for thickening)
  • 1/4 cup cold water (optional, for thickening)
  • 1 cup frozen peas (added at the end)


Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown chicken on all sides.
  3. Transfer browned chicken to your slow cooker.
  4. Add chopped onion, carrots, celery, and minced garlic to the slow cooker.
  5. Pour in chicken broth.
  6. Stir in thyme and rosemary.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  8. If thickening, mix cornstarch and cold water in a small bowl. Stir into the stew during the last 30 minutes of cooking.
  9. Stir in frozen peas during the last 10 minutes of cooking.
  10. Taste and adjust seasoning if needed.

Notes

  • You can use chicken breasts, but thighs stay more tender in the slow cooker.
  • Add other vegetables like potatoes or mushrooms if desired.
  • For a richer flavor, add a splash of white wine before the broth.
