Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup frozen peas


Instructions

  1. Place chicken, onion, carrots, celery, garlic, chicken broth, diced tomatoes, thyme, rosemary, salt, and pepper in a slow cooker.
  2. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender.
  3. Stir in frozen peas during the last 30 minutes of cooking.
  4. Serve hot.
