Description

A hearty and flavorful slow cooker stew with chicken and coconut milk.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (13.5 ounce) can coconut milk
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Place chicken, onion, garlic, and bell pepper in the slow cooker.
  2. Add diced tomatoes, coconut milk, chicken broth, cumin, and smoked paprika.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
  5. Shred the chicken with two forks.
  6. Stir the chicken back into the stew.
  7. Garnish with fresh cilantro before serving.
