Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (13.5 ounce) can coconut milk
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Place chicken, onion, garlic, and bell pepper in the slow cooker.
- Add diced tomatoes, coconut milk, chicken broth, cumin, and smoked paprika.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
- Shred the chicken with two forks.
- Stir the chicken back into the stew.
- Garnish with fresh cilantro before serving.
