Description

Ingredients

  • 2 pounds beef sirloin or chuck roast, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, halved or quartered
  • 1 cup beef broth
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)


Instructions

  1. Place the beef cubes and potatoes in your slow cooker.
  2. In a small bowl, whisk together the beef broth, butter, minced garlic, Italian seasoning, salt, and pepper.
  3. Pour the liquid mixture over the beef and potatoes in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef and potatoes are tender.
  5. If you prefer a thicker sauce, mix the cornstarch and water in a small bowl until smooth. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
  6. Serve hot.

Notes

  • You can substitute other root vegetables like carrots or parsnips for some of the potatoes.
  • For extra flavor, add a splash of Worcestershire sauce to the liquid mixture.
