- 2 pounds beef sirloin or chuck roast, cut into 1-inch cubes
- 1.5 pounds baby potatoes, halved or quartered
- 1 cup beef broth
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Place the beef cubes and potatoes in your slow cooker.
- In a small bowl, whisk together the beef broth, butter, minced garlic, Italian seasoning, salt, and pepper.
- Pour the liquid mixture over the beef and potatoes in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef and potatoes are tender.
- If you prefer a thicker sauce, mix the cornstarch and water in a small bowl until smooth. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
- Serve hot.
Notes
- You can substitute other root vegetables like carrots or parsnips for some of the potatoes.
- For extra flavor, add a splash of Worcestershire sauce to the liquid mixture.
- Garnish with fresh parsley before serving.
