- 4 ears of corn, shucked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons hot sauce (like Frank’s RedHot)
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons crumbled cotija cheese or Parmesan cheese
- 1 tablespoon lime juice
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn for 10-12 minutes, turning occasionally, until tender and slightly charred.
- While the corn is grilling, mix together the mayonnaise, sour cream, hot sauce, Cajun seasoning, garlic powder, salt, and pepper in a small bowl.
- Once the corn is cooked, brush it generously with the creamy Cajun sauce.
- Top with chopped cilantro, cotija cheese, and a squeeze of lime juice.
