A flavorful and easy Spicy Thai Chicken Lime Soup.
Ingredients

- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- Juice of 2 limes
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 1/2 cup chopped cilantro
- Optional: red pepper flakes for extra spice
Instructions
- Heat olive oil in a large pot or Dutch oven.
- Add chicken and cook until browned.
- Add onion, garlic, and ginger; cook until softened.
- Stir in chicken broth, coconut milk, and red curry paste.
- Bring to a simmer.
- Add fish sauce, lime juice, red bell pepper, and mushrooms.
- Cook until vegetables are tender, about 10-15 minutes.
- Stir in cilantro.
- Serve hot, optionally with red pepper flakes.
Notes
- Adjust the amount of red curry paste to control the spice level.
- You can use a slow cooker for this soup.
- Garnish with extra cilantro and lime wedges.
