Description
A fun and festive pasta salad perfect for Halloween. It features mozzarella balls made to look like eyeballs for a spooky touch.

- 1 pound pasta, cooked and cooled
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup chopped red onion
- 1/2 cup small mozzarella balls (bocconcini)
- 1/4 cup pimento-stuffed green olives, sliced (for “pupils”)
Instructions
- In a large bowl, whisk together mayonnaise, sour cream, parsley, chives, Dijon mustard, salt, and pepper.
- Add the cooked and cooled pasta, cherry tomatoes, black olives, and red onion to the bowl. Toss to combine.
- Gently fold in the mozzarella balls.
- To make the eyeballs: Place a slice of pimento-stuffed green olive onto each mozzarella ball to create a pupil.
- Chill the pasta salad for at least 30 minutes before serving to allow the flavors to meld.
- Serve cold.
Notes
- For a firmer “eyeball” effect, you can slightly press the olive pupil into the mozzarella.
- Add other Halloween-themed ingredients like candy corn or black beans for extra color.
