Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup chopped red onion
  • 1/2 cup small mozzarella balls (bocconcini)
  • 1/4 cup pimento-stuffed green olives, sliced (for “pupils”)


Instructions

  1. In a large bowl, whisk together mayonnaise, sour cream, parsley, chives, Dijon mustard, salt, and pepper.
  2. Add the cooked and cooled pasta, cherry tomatoes, black olives, and red onion to the bowl. Toss to combine.
  3. Gently fold in the mozzarella balls.
  4. To make the eyeballs: Place a slice of pimento-stuffed green olive onto each mozzarella ball to create a pupil.
  5. Chill the pasta salad for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve cold.

Notes

  • For a firmer “eyeball” effect, you can slightly press the olive pupil into the mozzarella.
  • Add other Halloween-themed ingredients like candy corn or black beans for extra color.
