Description

Sweet and tangy strawberry lemon blondies.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 cup fresh strawberries, diced
  • Glaze: 1 cup powdered sugar, 2 tablespoons lemon juice


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. Whisk together flour, baking powder, and salt.
  3. In a separate bowl, whisk together melted butter and sugar.
  4. Add egg, vanilla, and lemon zest. Mix well.
  5. Gradually add dry ingredients to wet ingredients. Mix until just combined.
  6. Gently fold in diced strawberries.
  7. Pour batter into prepared pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs.
  9. Let cool completely.
  10. Whisk together glaze ingredients. Drizzle over cooled blondies.
  11. Cut into squares and serve.

Notes

  • For extra flavor, use Meyer lemons.
  • You can substitute frozen strawberries, but thaw and drain them first.
