Sweet and tangy strawberry lemon blondies.
Ingredients

- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 1 cup fresh strawberries, diced
- Glaze: 1 cup powdered sugar, 2 tablespoons lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- Whisk together flour, baking powder, and salt.
- In a separate bowl, whisk together melted butter and sugar.
- Add egg, vanilla, and lemon zest. Mix well.
- Gradually add dry ingredients to wet ingredients. Mix until just combined.
- Gently fold in diced strawberries.
- Pour batter into prepared pan.
- Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs.
- Let cool completely.
- Whisk together glaze ingredients. Drizzle over cooled blondies.
- Cut into squares and serve.
Notes
- For extra flavor, use Meyer lemons.
- You can substitute frozen strawberries, but thaw and drain them first.
- Adjust sweetness to your preference.
