A classic sweet potato casserole topped with melted marshmallows, perfect for holidays or any occasion.
Ingredients

- 4 cups mashed sweet potatoes (about 2 pounds)
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potatoes, granulated sugar, melted butter, milk, vanilla extract, and salt. Mix until well combined.
- Spread the sweet potato mixture evenly into a 9×13 inch baking dish.
- Top the sweet potato mixture with mini marshmallows.
- Bake for 20-25 minutes, or until marshmallows are golden brown and melted.
- Serve warm.
Notes
- For a richer flavor, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture.
- If you don’t have mini marshmallows, you can use regular marshmallows cut into smaller pieces.
