- 1 packet taco seasoning
- 1 cup cooked quinoa or rice
- Your favorite taco toppings (lettuce, salsa, avocado, etc.)
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with olive oil, chili powder, cumin, salt, and pepper.
- Roast for 20-25 minutes, or until tender.
- Cook ground meat with taco seasoning according to package directions.
- Assemble bowls with quinoa/rice, meat, sweet potato, and toppings.
