A delicious and easy Sweet and Savory Pineapple Chicken and Rice recipe.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 (20 ounce) can pineapple chunks, drained, reserve juice
- 1/2 cup teriyaki sauce
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- Cooked rice, for serving
- Green onions, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and bell pepper; cook until softened.
- Stir in pineapple chunks, teriyaki sauce, soy sauce, garlic, and ginger.
- Simmer for 10-15 minutes, or until sauce has thickened.
- Serve over cooked rice and garnish with green onions.
Notes
- You can use a slow cooker for this recipe.
- Adjust the sweetness by adding more or less pineapple juice.
- Serve with your favorite side dishes.
