Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (20 ounce) can pineapple chunks, drained, reserve juice
  • 1/2 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Cooked rice, for serving
  • Green onions, chopped, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add onion and bell pepper; cook until softened.
  4. Stir in pineapple chunks, teriyaki sauce, soy sauce, garlic, and ginger.
  5. Simmer for 10-15 minutes, or until sauce has thickened.
  6. Serve over cooked rice and garnish with green onions.

Notes

  • You can use a slow cooker for this recipe.
  • Adjust the sweetness by adding more or less pineapple juice.
