- 1 tbsp coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp red curry paste
- 4 cups vegetable broth
- 1 can (13.5 oz) coconut milk
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1 tbsp soy sauce
- 1 tbsp lime juice
- Fresh cilantro, for garnish
Instructions
- Heat coconut oil in a pot.
- Sauté onion and garlic.
- Add red curry paste and cook.
- Pour in vegetable broth and coconut milk.
- Add bell pepper, broccoli, carrots, and mushrooms.
- Simmer until vegetables are tender.
- Stir in soy sauce and lime juice.
- Garnish with cilantro.
Notes
- Adjust the amount of red curry paste to your spice preference.
- You can add protein like tofu or chicken.
