Ingredients

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp red curry paste
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish


Instructions

  1. Heat coconut oil in a pot.
  2. Sauté onion and garlic.
  3. Add red curry paste and cook.
  4. Pour in vegetable broth and coconut milk.
  5. Add bell pepper, broccoli, carrots, and mushrooms.
  6. Simmer until vegetables are tender.
  7. Stir in soy sauce and lime juice.
  8. Garnish with cilantro.

Notes

  • Adjust the amount of red curry paste to your spice preference.
  • You can add protein like tofu or chicken.
