A flavorful and comforting Thai-inspired chicken soup with ginger.
Ingredients

- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken and cook until browned.
- Add onion, garlic, and ginger; cook until softened.
- Pour in chicken broth and coconut milk. Bring to a simmer.
- Add bell pepper and mushrooms; cook for 5-7 minutes.
- Stir in soy sauce, fish sauce, and lime juice.
- Season with salt and pepper.
- Simmer for 10 minutes.
- Garnish with cilantro before serving.
Notes
- Adjust the amount of ginger to your preference.
- You can add other vegetables like carrots or snow peas.
- For a spicier soup, add a pinch of red pepper flakes.
