Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion, garlic, and ginger; cook until softened.
  4. Pour in chicken broth and coconut milk. Bring to a simmer.
  5. Add bell pepper and mushrooms; cook for 5-7 minutes.
  6. Stir in soy sauce, fish sauce, and lime juice.
  7. Season with salt and pepper.
  8. Simmer for 10 minutes.
  9. Garnish with cilantro before serving.
