Description

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper; cook until softened, about 5 minutes.
  3. Stir in garlic; cook for 1 minute.
  4. Add crushed tomatoes, chicken broth, Creole seasoning, thyme, and cayenne pepper (if using). Season with salt and pepper. Bring to a simmer.
  5. Add shrimp to the sauce. Cook until pink and cooked through, about 3-5 minutes.
  6. Serve over cooked rice.

Notes

  • Adjust the cayenne pepper to your spice preference.
  • You can add other vegetables, like celery, to the sauce.
