- 1 pound elbow macaroni
- 4 tablespoons butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 4 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, shredded
Instructions
- Cook the macaroni according to package directions. Drain and set aside.
- Melt butter in a large pot over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth.
- Bring to a simmer, stirring constantly.
- Reduce heat and stir in cheddar and Monterey Jack cheese until melted.
- Season with salt and pepper.
- Stir in cooked chicken and macaroni.
- Serve immediately.
Notes
- You can add other cheeses like gruyere or parmesan.
- For extra flavor, add a pinch of nutmeg.
- Top with breadcrumbs before baking for a crispy topping.
