Description
This recipe makes a comforting, creamy chicken and rice dinner.
Ingredients
- Chicken breasts (2)
- Rice (1 cup)
- Chicken broth (4 cups)
- Heavy cream (1 cup)
- Onion (1, chopped)
- Garlic (2 cloves, minced)
- Butter (2 tablespoons)
- Salt and pepper to taste
- Optional: Peas (1 cup)
Instructions
- Melt butter in a pot.
- Add onion and cook until softened.
- Add garlic and cook briefly.
- Add chicken breasts and brown.
- Pour in chicken broth and rice.
- Season with salt and pepper.
- Bring to a boil, then simmer until rice is cooked.
- Remove chicken and shred.
- Stir in cream and peas (if using).
- Add shredded chicken back to the pot.
- Heat through and serve.
Notes
- Adjust seasonings to your preference.
- You can add other vegetables.
