Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, cinnamon, nutmeg, ginger, and cloves.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Press the dough evenly into the prepared baking pan to form the crust.
  6. In a separate bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and salt until smooth.
  7. Pour the pumpkin mixture evenly over the crust.
  8. Bake for 35-45 minutes, or until the center is set and a toothpick inserted near the center comes out clean.
  9. Let cool completely on a wire rack before cutting into bars.

Notes

  • For a richer flavor, you can add a tablespoon of bourbon to the pumpkin filling.
  • Ensure your pumpkin puree is not pumpkin pie filling, which already contains sugar and spices.
  • Bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
